Ingredients

  • 8 lamb loin chops (1 inch thick)
  • 2 marrow bones (split lengthwise)
  • 2 tbsp butter (softened)
  • 1 sprig rosemary (fresh)
  • salt and pepper

Instructions

    Roast marrow bones at 425°F for 15 minutes. Scoop marrow and mix with softened butter.

    Season lamb chops generously with salt and pepper.

    Heat cast iron to high. Sear chops 3 minutes per side for medium rare.

    Rest 5 minutes. Top each chop with bone marrow butter and rosemary.
