Ingredients
- 8 lamb loin chops (1 inch thick)
- 2 marrow bones (split lengthwise)
- 2 tbsp butter (softened)
- 1 sprig rosemary (fresh)
- salt and pepper

Roast marrow bones at 425°F for 15 minutes. Scoop marrow and mix with softened butter.

Season lamb chops generously with salt and pepper.

Heat cast iron to high. Sear chops 3 minutes per side for medium rare.
