Ingredients
- 1 lb beef liver (trimmed)
- 4 tbsp butter
- 2 tbsp tallow (or ghee)
- salt (to taste)
Instructions

Slice liver into thin strips. Pat dry.

Melt tallow in hot skillet. Sear liver strips 1-2 minutes per side — keep them pink inside.

Transfer to blender with butter and salt. Blend until completely smooth.

Pour into ramekins, refrigerate at least 2 hours until set.
